Pressure cooker jollof tricks
Cut your jollof time in half without losing the smoky party-rice flavour we all crave.
A pressure cooker can take jollof from a 90-minute affair to under 30 — but you have to cheat the smoke back in.
Step one: blend and fry your pepper base until the oil separates. Don't rush this; it's where the depth lives.
Step two: par-cook the rice in stock under pressure for 6 minutes, quick-release, then finish uncovered on low heat for 4 minutes with a foil cap to mimic the bottom-pot crust.
Step three: drop a piece of foil-wrapped smouldering charcoal on top for 60 seconds, lid on. That's your party-rice smoke.
